Typically, standard inductive proximity sensors tend to have a maximum operating temperature of around +70/80 degrees Celsius. However, you can also buy special high-temperature versions. To give you a guaranteed reliable and accurate operation, please select a sensor with the correct maximum and minimum operating range for the environment it's going to be used in.
